If you caught my post last week about
cooking one pot dinners, you'll know that I'm not always up for the dinner fuss. Although technically one pot and one fry pan where used, this dish was one of those times. It's hardly a recipe, but it sure is tasty.
Broccoli Bacon Pasta with Pine Nuts
Ingredients
- 1 packet of pasta - I used spaghetti, but any other shape would work as well.
- 1 head of broccoli
- about 300g of bacon
- 1 small packet of pine nuts
Method
- Cook the pasta in boiling salted water, halfway through cooking, throw in the chopped broccoli.
- Meanwhile, put the pine nuts in a dry fry pan and stir until they are toasted, then set aside. This won't take long, be careful they don't burn.
- In the same fry pan, fry the chopped bacon until it is cooked to your liking. I like it a little crispy, but still soft.
- Drain the pasta and broccoli, toss through the bacon and top with a sprinkle of pine nuts. Splash of chili sauce optional.
