Do you volunteer for canteen duty at your child's school? I've always tried to do so at least once a term. My children love seeing me behind the counter, probably because they know they can order whatever they like and I will just give it to them. It's a novelty for them to go to the canteen, so sometimes this gets a little out of hand - one day the two of them cost me almost $20! It's also a great way to get to know other mums as well as the children that your kids hang out with, and get a bit of an insight into the workings of the school. Also, as a tuck shop mum, you get lunch - and this particular wrap is only available to the people behind the counter. It's so simple but kind of amazing. I had to rush home and recreate it, and now I've gotten permission to blog it so consider yourself very lucky!
Tuck Shop Special
- 1 large flour tortilla
- Chicken - loose chopped chicken that comes in a bag is the order of the day at the tuck shop, but I've used the breast of a charcoal chicken at home.
- Sliced beetroot. Our tuck shop lady rests it on some paper towel first to get rid of excess juices.
- Grated cheese.
- Sweet chili sauce.
- Sliced tomato (optional)
Method
- Place everything on the tortilla/wrap in the following order;
- Chicken
- cheese
- beetroot
- sweet chili sauce
- tomato (if using)
- Fold up and toast in the sandwich press until done.
- Slice in half, serve with chilled tap water.
I raved about this to Mr BC and he wasn't at all intrigued, until I made it for him and he was genuinely (or maybe politely?) wowed. The beetroot and the sweet chili sauce somehow... It seems so simple but this is definitely a case of the whole being greater than the sum of it's parts.
