OK, if you are allergic to nuts this will not be a good choice, but if your children are in love with peanut butter, as mine are, this will ensure they eat up all their dinner. It's super easy, and on the table very quickly. Just add some stir fried veggies or a salad for a well rounded mid week meal.
Ingredients
- Cooked noodles or pasta of your choice. I always end up using fettuccine, I don't know why. Just go with it.
- 1 medium chopped onion.
- 500 grams of chicken mince, or pork mince. Both work well here.
- Olive Oil
- 2 Tablespoons of Soy Sauce
- 2 Tablespoons of Ketcap Manis
- 1 heaped tablespoon of crushed garlic
- tiny bit of chopped chili if your children can handle it.
- 2 heaped tablespoons of smooth peanut butter.
Method
- Saute the onion in the olive oil until translucent, then add the mince and stir until browned.
- Add the Soy, Ketcap Manis, garlic, chili if using, and peanut butter. Stir for a few minutes until well amalgamated.
- Add the noodles and work quickly and gently to ensure the noodles are all coated in the sauce without breaking. If the sauce seems too thick add a splash of water.
- Plate with some stir fried vegetables or salad, garnish with spring onion, and serve!
