Chicken soup is well known the world over for healing the sick. What could possibly make it better? Bacon of course! Bacon makes everything better! Just a little bacon will make you feel loved while the chicken soup will nurture you back to health. Keep it lean to avoid upsetting your tummy, you poor chicken.
Ingredients
- 1 packet of small pasta shapes of your choice.
- 3 spring onions
- 2 carrots
- 3 medium new potatoes
- 3 sticks of celery
- small head of broccoli
- tin of corn kernels, drained
- 4 chicken thigh fillets, chopped into cubes
- 250 g of bacon, chopped into small pieces
- 4 litres of chicken stock, made from scratch is best but stock powder is OK.
- 2 or 3 cloves of crushed garlic
- white pepper
- Olive oil
Method
- Cook the pasta in boiling salted water until al dente, set aside until needed.
- Chop the spring onions, place the white part only in a large saucepan, reserving the green parts for later.
- Peel the carrots and potatoes if needed, chop together with the celery and add to the saucepan. Add the garlic and saute lightly in a tiny bit of olive oil.
- Add the stock and simmer for about 20 minutes, until the potatoes are cooked.
- Chop the broccoli into small pieces and add to the soup with the corn kernels.
- Season with white pepper and simmer for a further 10 minutes until the broccoli is cooked but still bright green.
- While the soup is simmering, pan fry the bacon in a a non stick pan until cooked to your liking, set aside.
- Pan fry the chicken in the same pan until cooked through completely, set aside.
- To serve, place a scoop of pasta in each bowl, followed by a scoop of chicken/bacon, and finally top with a few ladles of soup. Finish with a sprinkle of the chopped green parts of the spring onions.
I like to keep the pasta separate, because I don't want to eat it but I feel no one else should suffer just because I need to watch my carbs. I keep the chicken/bacon separate so that the bacon especially doesn't become waterlogged and lose it's deliciousness before it gets to my mouth! For an adult twist, add some chili - it's good for your cold, too!
