This meal ticks all my boxes. It is delicious, you can customize each plate to the diner's likes and dislikes, it is reasonably healthy, and if you have the right leftovers in your freezer is is super fast to get on the table. It's a family favourite in this house!
Ingredients
- bolognaise sauce. I make extra so that I always have some in the freezer. It's so versatile!
- cooked rice, enough for about 1 cup for each person. This is also something that it easy to have ready to go in the freezer.
- 1 large tin of kidney beans
- grated cheddar cheese
- crunchy fresh salad, mine includes cherry tomatoes, cos lettuce and chopped cucumber. Sometimes corn kernels.
- corn chips, the less flavouring the better. Current favourites are white corn tortilla chips.
- sour cream
- avocado
The last two items might be optional in your house, they are mandatory in ours. I wouldn't contemplate making nacho salad without sour cream and avocado but each to his own!
Assembly
- Mix the bolognaise with the rinsed and drained kidney beans. Ta-da! Now you have nacho sauce! If I am ever out of bolognaise, I make a simple quick marinara sauce with onion and tinned tomatoes. And I will still have nacho sauce!
- Place rice in individual plates, as per the diners request. One of my monkeys likes extra rice, I like to use paleo rice in mine.
- Place a handful of corn chips on the rice. I just like a token few, honest!
- Place a large spoonful of sauce over the corn chips.
- Quickly cover with handful of grated cheese and microwave for a few minutes until the cheese is melty.
- Put some salad on there, or place it to the side, it's up to you.
- Garnish with a large spoonful of sour cream, top with avocado slices and you are good to go!
This version is monkey friendly. I like to add a big squirt of Srirarcha chili sauce to mine with a handful of chopped spring onions. I like that this dish is healthy but because it contains corn chips the children think they are eating junk food. Having said that, I always need to have extra corn chips and sour cream on hand otherwise a fight will break out. True story.
