Lazy Lunch

On Saturday I asked Monkey Boy if he would like a toasted sandwich for lunch.

No thanks Mum, I would just like a tray of hommus and crackers and cut up fruit and stuff.

Your wish is my command Darling!

I make this sort of thing occasionally, basically by just looking in the fridge and pantry, and deciding what would look good together. I had no lemons so used some white wine vinegar in the hommus and it turned out really well. Normally I would add cucumbers, but we had none. In Summer a bowl of cherry tomatoes from the garden is a delightful addition. I think pan frying hot dogs makes them less intestine-like, and the boys thought it was a gourmet thing to do, ha ha! I was going to add a bowl of olives and chopped feta, but the feta was off. Don't you hate it when that happens! We ate in the vegetable garden, and enjoyed some winter sun.

Lazy weekend lunches are the best.
