Easy Peach and Pecan Crumble

Yesterday I spent all day rearranging the furniture in the former garage/office space I share with Mr BC. It was exhausting, dirty work, and when it came to dinner all I could manage was fish fingers and oven fries. Such a lazy mum! Well, the menfolk in the house loved it. To appease my guilt somewhat, I made this dessert; an easy twist on the family favourite of peaches and custard.

Peach and Pecan Crumble

  1. Drain a large tin of peaches and place them in an oven proof dish.
  2. In a bowl, combine approx.
  3. Use your fingers to mix in a few tablespoons of butter, use a pinching/rubbing motion to make sure the butter gets through everything, like you where making scones.
  4. Into this, mix approx. 1 cup of chopped pecans.
  5. Pour the crumble mixture evenly over the peaches, and bake in a medium oven for about 30 minutes. Take it out when the pecans start to darken, because they burn easily.
  6. Serve with cold custard, and enjoy!
