As a diabetic, I match my carb intake with insulin. The problem with that is that more insulin equals increased weight gain, and the only way to lose diabetes is to lose weight. I've been trying to eat less carbs, in an effort to keep my insulin usage down. Which is hard, because bread? Roast potatoes? Cakes and biscuits of all kinds? Steamed basamati rice cooked in chicken stock? Its hard. SUSHI?? Say it ain't so!
*lies down and weeps*
So I can't go cold turkey on all grains, but I can make baby steps. I love the idea of
The Paleo Diet, but pure Paleo would mean no peas, no peanut oil, no chickpeas, no beer, no anything that derives from grains. I can't say 'never again' to anything, or these demented horns grow out of my forehead and scream 'You're not the boss of me!!' So mature. I figure if I can swap out starchy carbs for some Paleo wizardry most of the time, and minimize the things I love without growing horns, it will be a good thing for my body. Baby steps people!
Recipes like this are making it a little easier.
Paleo Fried Rice
(Contains
no actual rice. Shut the front door!)
- 1 head of cauliflower, finely chopped. Every recipe I read said to pulse in a food processor until it was chopped into rice size pieces, and they where right. If your processor is broken, you will have to chop it by hand, and that will be tedious. Just sayin...
- Oil (I used olive, but I don't know how Paleo friendly that is)
- crushed ginger
- Ketcap manis
- Chopped bacon, capsicum, bean shoots, shallots, onion, whatever you like in your fried rice! You can see I added peas, which although carb friendly, are not Paleo allowed.
- a thinly sliced, plain egg omelette.
- Sesame Oil.
Most websites I read said to steam the cauliflower first, until it was tender but definitely not mushy. I didn't do this, and it wasn't very mushy at all, although don't let it sit too long before serving.
- Heat olive oil in a wok, add bacon and onion and stir until bacon is crispy. If you wanted to add some chicken and prawns to this, now would be the time to cook them, but remove them when they are cooked so you can add them at the end.
- Add cauliflower, and garlic. Stir a lot. If you haven't steamed it first it will take 5-10 minutes to cook. I put the lid on to steam it, but kept removing it to stir often, because I didn't want it to go mushy. You want those grains of faux rice separate!
- About halfway there, add in the rest of your fried rice bits and pieces. Keep stirring, and mix in Kecap Manis.
- Plate up, top with sliced omelette, and sprinkle liberally with sesame oil.
Verdict? Very edible. All of the family ate this, and some people didn't even realize it wasn't rice! I'm sure this is a cheats version of Paleo, but it did save me at least 50 grams of carbs per cup, which makes me happy. Next time I will add some chopped coriander and a big squeeze of lemon.
