You know those times when you are running your pantry and freezer down to empty, and you are forced to be creative with who-knows-what is hiding back there, padded out with whatever is growing in the garden? That is the week we are having in the BC House.
This is fun! I love the creative challenge of thinking up new recipes. Most of the time the recipes are very healthy because the stuff I have great intentions of serving up (but don't) is generally super healthy legume type stuff. I think the family appreciates the change as well, although the only people that appreciated the buttered pearl barley with greens served with spicy sesame lentil balls that we had for dinner last night where Teenage Daughter and myself. Lucky I also baked some rosemary potatoes to go with that beef casserole that was lurking in the back of the freezer!
Silverbeet Hommus
- 1 can of chickpeas, rinsed and drained
- small bunch of silverbeet, or whatever your garden is growing
- juice of 1 lemon
- a few tablespoons of water, because you have run out of oil
- big pinch of salt
- a few cloves of garlic
Blend everything together, voila!. I served it with crackers and cherry tomatoes from the garden, but it would have been nice with some sourdough and thick cut cucumber. Guess it's time to go shopping!
